The story behind Zeppole di Natale: Honeyed Christmas Fritters

Zeppole di Natale, or scauratielli, belong to the Christmas sweets of Campania, particularly Cilento and the Sorrento peninsula. Water and flour first become a cooked dough in the saucepan. Rolled cords then form small loops, with short overlapping ends, before frying. Honey and coloured sugar beads finish the surface. Family preparations vary. Citrus peel can scent the dough or the honey; some versions include wine, rosemary or eggs. This version keeps a simple water-and-flour dough with sugar and lemon, then an orange-scented honey coating. It has no yeast-raised potato dough or custard topping: those belong to other preparations also known as zeppole or graffe. Make the loops similar in thickness and keep the shaped dough covered while working. Their thin honey coating catches the small sprinkles without hiding the fried surface. Serve freshly made, with the other Christmas sweets already ready for the table.

Zeppole di Natale bring honeyed fried dough to the Christmas table in Campania. These scauratielli start as a cooked dough, shaped into loops and fried in small batches. Finish them with orange-scented honey and tiny coloured sprinkles, then serve freshly made. Prepare biscuits and glazed sweets ahead so the last task is frying the zeppole.
