Golden S-shaped susamielli with whole almonds on a dark oval platter

Susamielli: Neapolitan Honey and Almond Christmas Biscuits

S-shaped Christmas biscuits with honey, finely ground almonds and warm spices, finished with whole almonds. A home batch of about 10.

  • Campania

Pulse the almonds to a fine meal, stopping before they become oily. Add the optional water only if the dough will not come together. Begin checking the biscuits after 10 minutes: extra baking makes the cooled biscuits firmer. The two whole almonds per biscuit are the chosen finish for this batch.

Make ahead Allow 15 minutes of chilling before shaping and let the baked biscuits cool completely before packing. The total includes a 30-minute cooling allowance; preparation and cooling are planning estimates, and extra tray batches take longer. For a gift, include the ingredients and identify wheat and almonds.

The story behind Susamielli: Neapolitan Honey and Almond Christmas Biscuits

Susamielli belong to Campania’s Christmas sweets. This almond-and-honey version takes the familiar S shape: two opposing curls joined by a single rope of dough. Whole almonds sit in the curls, while finely ground almonds and their skins leave small darker flecks through the biscuit. The surface is golden and lightly cracked, with a substantial bite after cooling. The dough is shaped by hand and gently flattened before baking. Keep the two curls readable rather than closing them into a ring. Grinding the almonds finely gives a different surface from covering the biscuits in chopped nuts; this batch uses the ground almonds inside and whole almonds to finish. On a Neapolitan Christmas sweets plate, set them beside roccocò and chocolate-covered mostaccioli. The almond rings, dark diamonds and honeyed S shapes give each preparation its own place.

Susamielli bring honey, almonds and warm spices to the Neapolitan Christmas sweets plate. Their opposing curls give them a different shape from roccocò rings and mostaccioli diamonds. Cool this batch completely before packing a gift tin, and identify wheat and almonds on the ingredient label. Pair the biscuits with a visit through Naples at Christmas.
