Struffoli

Tiny citrus-scented dough pieces are fried golden, folded through millefiori honey and finished with candied fruit.

  • Campania

Keep the pieces small and shake off loose flour before frying. The dough uses crystalline fructose; measure it separately from the honey coating.

Make ahead The dough needs an hour in the refrigerator before shaping. Coat the fried pieces only after draining them well.

The story behind Struffoli

Struffoli are part of Campania’s Christmas sweet table. Their small fried pieces gather under a glossy honey coating with bright candied fruit and sugar sprinkles.
