Nonna's tips

  1. Repeat the same pan

Use whole batches in identical pans for a larger yield. Adding a deeper layer of wet greens changes how the bread bakes.

The story behind Pizza di scarola

Pizza di scarola encloses well-drained greens in bread dough, with a crimped edge and a golden lid. It belongs to Naples’ Christmas Eve cooking and is also made for meals and gatherings throughout the year. Escarole brings a gentle bitterness; anchovies, capers and olives season the filling. This version uses an olive-oil dough and a shallow rectangular pan, making slices easy to share.
