Grind the almonds finely with the sugar and use only enough water to help the mixture bind. Shape similar small ovals so they bake evenly. For the uncooked icing, use pasteurized egg white labelled as suitable for uncooked preparations and follow its handling instructions. Add very little colour to keep the glaze pale pink.

Make ahead Leave time for the baked bases to cool completely before icing and for the coating to set. Active preparation and the one-hour cooling-and-setting allowance are planning estimates; extra trays or slower drying extend the total. Follow the pasteurized egg-white product’s handling and storage instructions.

  2. Pulse the warm almonds with the sugar to a fine, even mixture. Add only a little water if needed to help it come together.

  3. Transfer to a bowl and work in the eggs, finely grated lemon zest, vanillin and finely chopped candied fruit. Reserve the lemon juice for the icing.

  4. Arrange edible wafers on a paper-lined tray. Shape similar small elongated mounds of dough and place one on each wafer, leaving space between them. Bake extra trays separately if needed.

  5. Cool completely on a rack, then trim away any wafer projecting beyond the cake bases.

  6. For the uncooked icing, use pasteurized egg white labelled suitable for uncooked preparations. Mix it with the sifted icing sugar and half the reserved lemon juice, adding the juice gradually. The glaze should be thick but flow slowly; loosen with a little more pasteurized white only if needed. Mix in a little red food colouring for a pale pink.

  7. Dip each cold pastry in the glaze and lift with a fork, letting the excess drain. Set on a rack over a tray and place one blanched almond on each top before the coating sets.

  8. Leave the coating undisturbed until set, then lift gently onto a serving plate. Follow the egg-white product’s handling and storage instructions for the finished pastries.

The story behind Divino Amore: Neapolitan Almond Christmas Pastries

Divino Amore belong to Naples’s almond-rich Christmas pastry tradition. Ground almonds and chopped candied fruit form the body of the cake; a coloured sugar coating gives the outside a different texture. The dough is shaped into small elongated mounds on edible wafers, rather than piped as an airy sponge batter. Pink and white sugar finishes are part of the family, alongside chocolate-coated variations. This version uses toasted skin-on almonds in the dough and a pale pink icing, with a single blanched almond to finish each pastry. Fine grinding and finely chopped fruit keep the small shapes even. The wafer supports the soft mixture during baking and can be trimmed once the cakes are cold. On a Neapolitan Christmas sweets plate, Divino Amore bring a different preparation from white-glazed raffioli, whose centres are sponge, or honey-and-almond susamielli shaped into an S. Let the glaze set before arranging the pastries, so each finish keeps its shape. The almond, candied fruit and sugar coating give these small cakes their character without needing extra decoration.

Divino Amore add pale pink icing and an almond-rich centre to a Neapolitan Christmas sweets plate. Candied fruit runs through the dough, and a blanched almond finishes each pastry. Let the coating set before serving beside spiced susamielli and white-glazed raffioli. For the uncooked icing, use a pasteurized egg-white product labelled for that use and follow its handling instructions.
