Plain round baking wafers with thin layered edges on a stone counter.

Edible baking wafers

Thin, pale baking wafers hold the honey-and-nut filling of Agnone’s ostie ripiene. Choose plain, unfilled rounds in the size required by the recipe.

Set out the pairs first

Lay the bottom wafers on a flat tray before heating the filling, with their matching tops close by. Spread the warm nut mixture gently with a small spatula and leave the narrow rim clear. Add the tops, then cool under the light, even pressure described in the recipe.

Two delicate layers around the filling

Agnone’s filled wafers bring honey and nuts between two pale discs. Some local versions include cocoa or chocolate. The wafers form the outer layers; their thin edges stay visible around the filling. In our honey-and-nut recipe, each pair encloses a measured share of the warm mixture.

Let the filling settle

Allow the filled wafers to cool completely before moving them to a serving plate. A light touch preserves the thin discs and their nut-filled center. Keep any unused plain wafers separate from the finished sweets.

Match the diameter and use

Look for plain edible wafers sold for baking or confectionery. For the Agnone recipe, choose dry, unfilled rounds 75 mm across and count two per sweet. Check the ingredients and allergen declaration on the pack: wheat-based wafers contain wheat, and different products can have different formulas. Keep the packaging until the sweets are served.

Keep the spare wafers dry

Follow the pack’s storage directions and date. Close it securely after taking out the wafers, protect the remaining discs from steam and handle them with dry hands. Keep the rounds flat so their edges stay intact.
