Nonna's tips

  1. Work with a warm filling

Fill the wafers as soon as the nut mixture leaves the heat. Warm honey spreads more easily; heavy pressure can fracture the thin wafers.

The story behind Ostie ripiene di Agnone

Agnone’s ostie ripiene sandwich a honey-bound nut filling between thin white wafers. They are associated with Christmas in Alto Molise. Chocolate appears in some versions; this batch keeps the filling to walnuts, almonds, honey and orange.
