Walnuts

Tuscan recipes use walnuts chopped into batters and doughs, folded into fillings, or scattered over a cake.

Castagnaccio
Chopped walnuts go into the batter and onto the surface.
Pan co’ Santi
Shelled walnuts are browned with rosemary and cooled.
Sfratto
Walnuts cook with honey to make the pastry filling.

Three recipes, three roles

Walnuts become part of a chestnut-flour batter, a raisin bread and a honey filling in three Tuscan preparations.

In castagnaccio, chopped walnuts are divided between the batter and the surface. Siena’s Pan co’ Santi gives them another treatment: the shelled nuts are browned with rosemary, allowed to cool, then folded into the dough with raisins. In Pitigliano’s Sfratto, they cook with honey for the filling enclosed in pastry.

Read the method as well as the ingredient list. For these preparations, check whether the walnuts go into a batter, need browning and cooling, or become part of a cooked filling. The same ingredient takes a different route to the table in each recipe.

How recipes use walnuts

In Visit Tuscany’s castagnaccio, roughly chopped walnuts go into the batter and on top. For Siena’s Pan co’ Santi, the recipe first browns shelled walnuts with rosemary, cools them, then adds them with raisins to the dough. In Pitigliano’s Sfratto, walnuts cook with honey for the filling.

Questions worth asking

Where do the walnuts go in castagnaccio?

Visit Tuscany’s recipe adds half to the batter and scatters the rest over the surface before baking. They have both roles in that version.

Are the walnuts added straight to Pan co’ Santi dough?

In Visit Tuscany’s recipe, they are first browned with rosemary, then cooled. The rosemary is removed before the walnuts and raisins are added to the dough.

How are walnuts used in Sfratto di Pitigliano?

They cook with honey and nutmeg for the filling. The mixture is allowed to cool and firm up before it is enclosed in pastry. Walnuts and nutmeg are separate ingredients in the recipe.
