Nonna's tips

  1. One compact filling

The cut should show one continuous fruit-and-nut core inside a thin pastry shell. Keep the same log thickness when making additional coils.

The story behind Presnitz

Presnitz belongs to the pastry traditions of Trieste and Gorizia. A thin shell of puff pastry encloses a rich, close-textured filling of dried fruit and nuts, then bends into a loose coil. It differs from the yeasted doughs of putizza and gubana. In this home version, walnuts, almonds and pine nuts meet rum-soaked raisins, candied orange and dark chocolate. Let the pastry cool before slicing so the filling holds neatly inside its flaky shell.
