Nonna's tips

  1. Can fresh turnips replace brovada?

Use fermented brovada for its grape-pomace aroma and acidity. Fresh turnips have a different flavor and texture.

The story behind Brovada e Muset

Brovada and muset bring together two distinctive Friulian preparations: tart turnips fermented in grape pomace and a coarse pork sausage that includes meat from the snout. The acidity of the turnips balances the soft, rich sausage.
