Shredded Brovada DOP
Brovada DOP is a Friulian preparation of turnips fermented with red-grape pomace. Peeled and cut into strips, the turnips bring a distinct acidity to brovada e muset.
- Vegetable
- White turnips with a purple collar.
- Preparation
- Fermented with grape pomace, then peeled and cut.
- At the table
- A traditional companion to Friulian muset.
Cook the strips gently
Add the cut brovada to the aromatic base with bay leaves and a little broth. Cover and cook gently, adding broth as needed so the turnips soften without catching on the pan. Cook the muset separately, then bring the two together for serving.
Turnips after the grape harvest
Brovada links the turnip crop with winemaking: grape pomace supplies the medium in which the roots ferment. Its character comes from that transformation, rather than from fresh turnip alone. Brovada DOP is a protected product of Friuli Venezia Giulia. The fermented turnips are peeled and cut into strips before packing. They are then cooked for brovada e muset, where their acidity balances the richness of the pork sausage.
Serve beside sliced muset
Spoon the hot turnips onto a platter and add thick slices of cooked muset. Leave some turnips visible around the meat: they are a substantial part of the dish, with their own texture and acidity.
Cook with it
Choose the fermented, cut product
For brovada e muset, choose Brovada DOP already peeled and cut into strips. Check the protected name on the label and the preparation instructions. Fresh turnips and sauerkraut have different identities and will give a different result.
Follow the pack’s storage directions
Keep the unopened pack as its label directs. After opening, follow the product’s refrigeration and use instructions; fermented or pasteurized preparations can have different storage requirements. Keep the remaining brovada covered.
