Plain sweet dry biscuits

Plain sweet dry biscuits become a crumb ingredient in Presnitz, alongside nuts, raisins and chocolate. Choose a simple unfilled biscuit and crush the weighed amount before mixing the filling.

Conventional wheat biscuits contain gluten; milk, soy, egg and other declarations vary by product.

A biscuit inside the pastry

The biscuit in Presnitz is part of the filling, not the outer shell. Crushed pieces join walnuts, almonds, raisins, chocolate and candied orange beneath puff pastry. Choose a plain sweet dry biscuit so its flavor stays within that mixture.

Amaretti have their own almond character, while savory sailor’s biscuits belong to a different kitchen use. Neither defines the simple sweet dry biscuit selected here.

Weigh, then crush

Weigh the biscuits before crushing them. Put them in a sturdy food bag and break them with a rolling pin, or use a food processor in short pulses. Aim for small, even crumbs without turning every piece into powder. Add the crumbs at the filling stage stated in the recipe. These are already baked biscuits, not raw cookie dough.

A pantry ingredient for Trieste’s Presnitz

Presnitz brings nuts, dried fruit and chocolate together inside a rolled pastry. The 50 g of biscuits in our filling are weighed separately from the nuts and pastry. Keep that allocation distinct when preparing the ingredients.

Crumbs among fruit and nuts

Distribute the crumbs through the filling before wrapping the pastry so they do not remain in a single patch. The nuts and dried fruit should remain recognizable. The outer shell still comes from raw puff pastry; the biscuit crumbs do not replace it.

Cook with it

Choose the plain version

Look for an unfilled, uncoated sweet dry biscuit. Avoid chocolate-coated, cream-filled, strongly spiced or almond-flavored versions for this filling. Read the ingredient and allergen list even when the front of the pack looks familiar: plain biscuits can contain milk or soy, and precautionary declarations vary. Buy by the usable weight, not an assumed biscuit count.

Keep them dry

Keep biscuits in a cool, dry place under the pack’s directions. After opening, close the wrapper well or put the biscuits in a clean airtight container to protect their dry texture. Crush only what you need and keep the rest separate from the moist filling. Follow the finished Presnitz recipe once the biscuits have been mixed with the other ingredients.

Questions worth asking

Are amaretti the same ingredient?

No. For this Presnitz use plain sweet dry biscuits, rather than almond-flavored amaretti.

Can I use cream-filled cookies?

Choose unfilled, uncoated biscuits for the filling described here.

How many biscuits make 50 g?

Weigh 50 g. Biscuit sizes differ, so a fixed count would change the amount.

Are plain biscuits dairy-free?

Check the complete pack declaration. A plain appearance does not establish the absence of milk, soy, egg or other allergens.
