Nonna's tips

  1. A shallow cake

Keep the batter at roughly the same depth when changing quantities. A deeper tin takes longer to bake and can leave a wet centre beneath the nuts.

The story behind Trentino Zelten with figs and nuts

Zelten is a Christmas sweet in Trentino. This cake version surrounds dried fruit and nuts with a butter, egg and flour batter, lifted with baking powder. The South Tyrolean fruit bread, which can contain rye flour and yeast, is a different regional preparation.
