Flour starts two Ligurian pastas with different shapes.

The Genoa Chamber of Commerce’s corzetti dough combines flour with egg yolks, salt and water. Its rounds are stamped on both sides. La Mia Liguria describes trofie made with flour, warm water and salt, formed by rolling and twisting small pieces under the palm.

Pine nuts or pesto

The Chamber’s Levante corzetti are dressed with a pine-nut and marjoram sauce. The regional trofie guide serves its hand-shaped pasta with pesto.
