Nonna's tips

  1. Keep the sealing edges clean

A small mound of filling leaves room to press the edges together. If filling touches the seam, wipe it away before closing so the parcel stays sealed in the water.

The story behind Pansoti al sugo di noci

Pansoti are filled pasta from Liguria’s Levante, often paired with walnut sauce. Their green filling draws on local herbs; this combination uses borage and chard with the gently tangy fresh curd prescinsêua.
