Mesciua with chickpeas, cannellini beans and farro.

Mesciua

Chickpeas, cannellini beans and whole farro share a light cooking broth, finished simply with olive oil and freshly ground black pepper.

  • Liguria

Cook the beans separately from the chickpeas and farro, then bring them together only when tender. Keep enough cooking liquid to make a brothy soup rather than a dry bowl of grains.

Make ahead Start the soaking the evening before. The cooked soup can be cooled promptly and refrigerated in a covered container; reheat thoroughly and add water if the grains have absorbed the broth. Add the finishing oil in the bowls.

Nonna's tips

  1. Follow tenderness, not just the timer

A chickpea should crush easily when pressed, and a bean should be creamy inside without a hard center. Continue cooking the components separately until each is ready.

The story behind Mesciua

Mesciua is a soup associated with La Spezia. Its mixture of chickpeas, white beans and grain makes a substantial meal without a rich sauce, finished with olive oil and pepper.
