Farinata di ceci

A thin chickpea-flour bake with a blistered golden surface, crisp edges and a soft center, best cut and served straight from the pan.

Give the batter its full rest, then skim the foam and stir again before pouring. A generous film of oil and a thoroughly heated oven help the edges release and brown. Keep the layer shallow.

Make ahead Mix the batter ahead to allow its 5-hour rest. Bake close to serving time; if reheating a cooked piece, use a hot oven to restore the edges rather than a microwave.

Nonna's tips

  1. Stir before dividing

Chickpea flour settles during the rest. Stir right down to the bottom before filling either pan, so both farinatas have the same consistency.

The story behind Farinata di ceci

Farinata belongs to Liguria’s oven and street-food tradition. Chickpea flour, water and olive oil become a shallow savory bake, often sold by the slice in the region’s sciamadde.
