Nonna's tips

  1. Brown in batches

A crowded pan releases too much moisture. Give each piece contact with the hot casserole before starting the braise.

The story behind Coniglio all’ischitana

On Ischia, rabbit belongs to the island’s inland cooking as much as fish belongs to its coast. White wine, a little tomato and aromatic herbs give this braise its character. Family versions differ in their herbs and whether the pieces are stuffed; this version keeps the rabbit in simple bone-in portions.
