Tuscan roast pork loin (arista)

Method

  1. Heat the oven to 150°C.

  2. Mix the finely chopped garlic with chopped fresh rosemary, salt and pepper, then rub the mixture over the lean pork loin.

  3. Tie the loin with kitchen twine to keep its shape. Set it in a roasting pan with extra-virgin olive oil and 200 ml of Soave.

  4. Roast for about 1 hour, turning the meat from time to time.

  5. Slice thinly and serve with the pan juices.
