Grilled T-bone steak with sliced beef beside the bone

Bistecca alla fiorentina

A thick T-bone steak grilled over embers, rested and sliced, with salt, black pepper and a little olive oil.

  • Tuscany

Choose a T-bone with both tenderloin and strip loin attached. A well-heated grill browns the outside quickly; the center is traditionally served rare. Thickness and the heat of the embers matter more than the clock, so adjust the cooking to the doneness you prefer.

  1. Heat a charcoal grill until the embers are glowing and there are no flames beneath the cooking area. Clean the grate and set it over the heat. Nonna's tips

  1. Cooler grilling zone

Keep a cooler part of the grill available so you can move the steak if dripping fat causes flames.

  2. Catch the juices

Use a board with a rim or a platter to catch the juices released during resting and carving.

The story behind Bistecca alla fiorentina

In Florence, fiorentina means a large, thick steak with a T-shaped bone separating the tenderloin from the strip loin. It is a dish for sharing, cooked over embers and carved at the table. Chianina is a familiar choice, but the cut is also prepared from other cattle breeds.
