Method

  1. Heat the oven to 190°C. Cut each bread slice in half and arrange the pieces on a baking sheet.

  2. Remove the sausage casings. Put the sausage meat and stracchino in a bowl and mix thoroughly with a fork, breaking up any large pieces of meat.

  3. Spread the mixture evenly over the bread, reaching close to the edges. Bake for about 15 minutes, then check that the sausage topping is fully cooked and has reached 71°C (160°F), measured with a food thermometer. Continue cooking if needed.

  4. For a more golden surface, finish briefly under the broiler, watching closely. Serve the crostini hot.
