Half-moon Gepichta Kropfn with butter and grated smoked ricotta

Gepichta Kropfn

Sappada’s pinched potato ravioli, filled with ricotta and mint and finished with smoked ricotta and butter.

  • Friuli-Venezia Giulia

Begin with cooked, peeled potatoes: warm for the dough, cooled for the filling. Boiling and cooling raw potatoes requires additional time before the recipe clock. For larger quantities use additional pots or pans, keeping the piece sizes and cooking endpoints.

Make ahead Weigh the cooked potatoes and grate the cheeses ahead. Shape the ravioli shortly before cooking so the wrappers remain supple.

Allow about 15–16 g per piece, placing the filling on one half of each disc and keeping a clean rim. Fold the free half over, expel trapped air and pinch the edges firmly together. 4. Bring the cooking water and bath salt to a boil in a pot, allowing about 12 minutes. Lower to a gentle boil and cook about 8 ravioli at a time. Nonna's tips

  1. Pinch a clean rim

Keep the filling away from the edge and seal each disc before the potato dough dries. A gentle boil helps the closed ravioli stay intact.

The story behind Gepichta Kropfn

Gepichta Kropfn are savory ravioli from Sappada. Their potato wrappers enclose a potato-and-ricotta filling scented with mint, with smoked ricotta and butter to finish. They are distinct from the sweet Mogn Kropfn.
