Breaded butterflied sardoni on a ceramic plate

Sardoni fritti e impanati di Trieste

Fresh anchovies opened flat, coated in flour, egg and breadcrumbs, then fried until crisp.

  • Friuli-Venezia Giulia

Buy fresh anchovies large enough to open neatly, or ask the fishmonger to butterfly them while keeping the fillets joined. For larger quantities use additional pots or pans, keeping the piece sizes and cooking endpoints.

Make ahead Prepare the coating dishes first; clean, coat and fry the fish close to serving.

Method

  1. Remove the heads and guts from the anchovies. Open each along the belly and lift out the backbone, leaving the two fillets joined like a butterfly. Rinse briefly to remove debris and pat very dry. A fishmonger can do the cleaning; the listed weight is for whole fish.Remove the heads and guts from the anchovies. Nonna's tips

  1. Dry before coating

Water trapped on the fish weakens the coating and makes hot oil spit. Dry the butterflied fish carefully before using the flour.

The story behind Sardoni fritti e impanati di Trieste

In Trieste, sardoni are anchovies, distinct from sardines. The impanai preparation opens and bones the fish before coating and frying; it is separate from the vinegar-and-onion in savor preparation.
