Nonna's tips

  1. Watch the morchia

Use a light-coloured pan so you can judge the cornmeal’s colour. It continues to darken in the hot butter after the heat is turned off.

  2. Scale the pot, keep the texture

For a larger batch, use a wider heavy pot and stir thoroughly. Keep the polenta soft; increase the hot-water reserve proportionally and add it only as needed.

The story behind Toc in braide with cheese cream

Toc in braide brings together soft polenta, melted cheese and morchia in Friulian cooking. Morchia is the butter-and-cornmeal topping: the meal toasts until it smells nutty and turns hazelnut brown. This version uses fresh cow’s-milk and goat’s-milk ricotta with malga cheese. Keep the polenta soft enough to spread in the bowl, so each spoonful gathers the cheese and toasted butter.
