In Tuscany, farina gialla thickens farinata di cavolo nero, a soup with cavolo nero and cannellini beans. A Mugello version, farinata con le leghe, combines maize flour with cavolo nero, borlotti beans and leeks. That recipe specifies stone-ground flour; the cavolo nero version does not name a grind. Farina gialla is also used for polenta. Choose a flour suited to the recipe rather than assuming that every yellow maize flour is bramata.
