Nonna's tips

  1. Why is the vinegar added last?

A small final addition keeps its acidity distinct in the pale fish broth. Taste before adding more.

The story behind Brodeto de Pesse alla Ciosòta

This Chioggia brodeto brings together several Adriatic fish with shellfish in a pale fish broth. The fish frames make the fumet; vinegar added at the end sharpens the broth without concealing the fish.
