Order a young cleaned duck with its liver, heart and cleaned gizzard. A large broth pot is essential. For larger quantities use additional pots or pans, keeping the piece sizes and cooking endpoints.

Make ahead Chop the vegetables ahead. Cook the broth and pasta on serving day, keeping raw giblets refrigerated until needed.

Nonna's tips

  1. Two dishes from one bird

The boiled duck and the bigoli are separate dishes. The pasta sauce uses liver, heart and gizzard; do not shred the whole duck into it.

The story behind Bigoli con l’anatra

Venetian bigoi co’ l’arna join thick extruded pasta to duck. This version uses the boiled bird for broth and its giblets for the sauce, leaving the duck itself to serve separately.
