The ingredient

The duck’s muscular stomach, supplied raw, opened and thoroughly cleaned.

The gizzard is the muscular part of a bird’s stomach. It has dense red muscle and paler connective tissue. It is a specific organ, not a general name for all the duck’s giblets.

In the kitchen

Ask the butcher for the gizzard already opened, emptied and stripped of its tough internal lining. Check that it is clean before weighing. Simmer it with the duck until tender, then chop it finely for the sauce rather than treating it like a quick-cooking liver.

Context

In the duck-bigoli preparation, the cleaned gizzard simmers with the bird in the broth before being chopped for the dressing. Liver and heart enter the pan later.

At the table

Weigh 50 g after opening and cleaning. This is separate from the 1,600 g bone-in duck. The cooked, chopped gizzard joins the offal dressing without adding another unweighed portion of giblets.

Choosing it

Order raw duck gizzard explicitly. Check that it is cleaned and ready for cooking; a jar of confit gizzards is already cooked and seasoned, and is a different preparation. Poultry species and organ should be identified on the order.

Keeping it

Keep the raw gizzard chilled and separate from ready-to-eat foods. Follow the supplier’s use-by instructions and cook it through in the scheduled broth stage.

Questions worth asking

Is a gizzard the same as the heart?

No. The gizzard is part of the digestive tract; the heart is a separate organ.

Can confit gizzards fill this raw role?

They have already been cooked and seasoned. Order the raw cleaned organ for the broth stage.
