A delicate offal ingredient

Prepared veal brains are a small, finely chopped part of the egg-and-meat filling in cima alla genovese.

Cervella identifies the brain, a different organ from liver or sweetbreads. In cima it joins veal meat, eggs, vegetables, cheese and herbs inside a sewn veal-belly pocket.

Ask for the preparation first

Have the butcher clean the brains for the recipe, then weigh the ready portion. Chop as directed and cook with the filling. Move the filled pocket promptly into its poaching stage.

A Genoese filling

Chopped brains enter the pan with the other filling ingredients before the pocket is filled. Their measured share stays separate from the veal pulp.

Follow the whole cooking sequence

Sautéing the filling is followed by poaching the filled pocket. Use the recipe’s core-temperature, holding-time and prompt-cooling instructions for the finished cima.

Cook with it

Name the animal and the organ

Ask specifically for veal brains and explain that they are for a cooked filling. Confirm the animal and whether cleaning is included before weighing the portion.

Keep them refrigerated

Follow the butcher’s use-by and refrigeration directions. Keep raw offal covered and separate from ready-to-eat food, bringing it out when the filling is ready to cook.

Questions worth asking

Can I replace the brains with sweetbreads?

They are different organs. Order the ingredient named for this filling.

Is the weight before cleaning?

Weigh the prepared portion after the butcher has cleaned it.
