Tajarin with veal and roast jus

Fine egg noodles with a white veal ragù, rosemary, white wine and the concentrated juices of a roast.

  • Piedmont

Start with prepared unsalted roast veal jus: the browned, deglazed cooking juices of a real roast, strained and defatted. Ordinary stock alone will not give the same result.

Make ahead Have the roast jus ready before you begin. Make the ragù while the pasta dough rests; cut the noodles just before boiling.

Nonna's tips

  1. Real roast juices

Use the browned cooking juices of a roast, loosened with water and strained. If they are already salted, reduce the sauce’s salt before adding any more.

The story behind Tajarin with veal and roast jus

Tajarin are the fine egg noodles of Piedmont and the Langhe. Roast juices are one of their established dressings. Here they enrich a finely chopped veal ragù, without tomato, so the pasta stays glossy rather than submerged in sauce.
