Nonna's tips

  1. Can I shorten the braise?

Judge tenderness with a fork: a tough piece needs more gentle cooking, even after four hours.

The story behind Brasato al Barolo

Barolo gives this Piedmontese braise its name and the wine base for its sauce. A single piece of beef cooks slowly with its marinade until tender enough to slice. Passed vegetables give the dark sauce body.
