Panna cotta

Sweetened cream sets into a delicate, vanilla-scented dessert that releases cleanly from its mold after a long chill.

Bloom the sheets fully in cold water and stir them into warm cream until no streaks remain. A gentle heat keeps the cream smooth; the molds need at least five hours to set.

Make ahead Make the molds the day before and chill them covered. Unmold just before serving; add a topping at the table if you like.

Nonna's tips

  1. Let it set fully

Do not try to unmold the dessert before the full chill; the center should hold its shape when the mold is inverted.

The story behind Panna cotta

Panna cotta is a Piemonte dessert built around cream, sugar and gelatin. Vanilla perfumes this version, which is chilled in small molds and turned out at the table.
