Golden hazelnut cake with a wedge cut from the round cake

Langhe hazelnut cake

A golden hazelnut cake with chopped toasted nuts and smooth hazelnut paste, baked until lightly risen and fragrant.

  • Piedmont

Adapted from Carlo Zarri’s Cortemilia cake, this combines chopped hazelnuts with pure hazelnut paste. Grind half the nuts to a paste and keep the other half in small pieces. Whole eggs beaten with sugar give the batter lift before the flour and nuts are folded in.

Nonna's tips

  1. Use a small processor

bowl for the paste so the blades can catch the nuts. Scrape the sides patiently rather than adding oil or water.

  2. Check the center

at the end of baking; if it still carries wet batter, bake a few minutes longer before cooling.

The story behind Langhe hazelnut cake

Hazelnut cake is closely associated with the Langhe and Cortemilia, where hazelnuts are a defining ingredient of local baking. This cake has a simple golden surface and a fine, nutty crumb, without icing or filling.
