Nonna's tips

  1. Do not force the filling

Smaller sardines need less filling. Keep the rolls in one layer and repeat a dish when scaling.

The story behind Sarde a beccafico with raisins and pine nuts

Sarde a beccafico are part of Sicily’s fish cooking. In this baked version, opened sardines enclose breadcrumbs, raisins, pine nuts, onion and parsley. The rolls sit close together with bay leaves between them, then receive olive oil and lemon before going into the oven. The filling stays inside the fish while the exposed crumbs take on colour.
