Granita siciliana al limone

Lemon, water and sugar, frozen and worked into fine, wet crystals for a Sicilian granita made in a home freezer.

This is a home-freezer method. Freezing time varies with the freezer and the depth of the liquid; follow the texture rather than waiting for a solid block.

Make ahead If it freezes firm, let it soften briefly in the refrigerator, then scrape and stir until loose before serving.

Nonna's tips

  1. Keep the proportions

Sugar affects how hard the granita freezes. Reducing it changes the texture as well as the sweetness.

The story behind Granita siciliana al limone

Granita is part of Sicily’s café table, served in flavors from lemon to almond and coffee. This is the lemon version: no milk or egg, just juice and a light syrup. Frequent scraping keeps the frozen mixture loose enough to eat with a spoon.

Sicily

Sicilian granita has several local flavors and textures. Lemon is one version within that wider tradition, not a base recipe for almond or coffee granita.
