Thick squares of Palermitan sfincione with tomato, onion and bread crumbs

Sfincione palermitano with tomato and onion

Soft Palermo-style tray bread topped with slow-cooked onion and tomato, caciocavallo, salted sardines, oregano and toasted bread crumbs.

  • Sicily

Have the desalted, boneless sardine fillets ready. Let the sauce cool before spreading it over the dough, and keep the topping moist but free of watery liquid.

Make ahead The onion-and-tomato sauce can be made earlier the same day and refrigerated once cool. Bring only the amount needed for topping back toward room temperature while the dough rises.

Nonna's tips

  1. Keep the sauce thick

The onions should be soft and the sauce spreadable. Watery topping soaks into the center; reduce it before cooling rather than adding more bread crumbs to the raw dough.

  2. Keep the tray load

For two full trays, double the formula and use two trays of the same size. Bake separately if your oven cannot hold them with space for heat to circulate.

The story behind Sfincione palermitano with tomato and onion

Sfincione palermitano is a soft, substantial tray bread with a tomato-and-onion topping. Pieces of caciocavallo and salted sardine sit beneath the sauce, and toasted bread crumbs add a rough golden surface. Cut it into generous squares and serve warm after a short rest.
