Nonna's tips

  1. Drain before weighing

A wet ricotta cream can soften the lining and make unmolding difficult. Use the drained weight and avoid adding liquid from the bowl to the filling.

The story behind Cassata siciliana

Cassata brings ricotta, sponge, almond paste and candied fruit into one Sicilian celebration cake. A lining of sponge and marzipan encloses the cream; the inverted cake receives a white sugar glaze and candied fruit. This version leaves the almond paste its natural pale color.
