An Italian Christmas Eve Menu

Four courses for Christmas Eve: escarole pie, clam pasta, salt cod with potatoes and struffoli, with full-batch shopping and a cooking timeline.

Christmas Eve dinner can begin with a slice of escarole pie, move to spaghetti with clams, and finish its savoury courses with salt cod, potatoes and crisp sweet peppers. Struffoli bring the honey at the end. This is a four-course menu for a home cook who wants a southern Italian direction and a manageable order of service, with each dish linked to its full recipe.

The pasta and fish recipes each serve four. The pie makes eight servings and the struffoli twelve, so those two full batches leave extra. The shopping list buys every recipe once at its stated yield; it does not resize all four dishes to a common guest count. Decide on those quantities before shopping or printing the plan.

A southern Italian Christmas Eve

The cena della Vigilia is the meal on 24 December. The traditional idea of magro gives this selection its meatless direction, but does not mean vegetarian: anchovies season the pie, clams go into the pasta, and baccalà follows. Pizza di scarola belongs to the Neapolitan Christmas Eve tradition; here its greens, olives and capers lead into a seafood dinner.

This particular menu combines Campanian dishes with a Lucanian main course, baccalà con peperoni cruschi. It is an editorial selection rather than one region’s fixed Christmas ritual. The Feast of the Seven Fishes has its own Italian-American story. There is no need to turn this dinner into seven dishes or seven species; use the separate Seven Fishes planner if that is the meal you intend to cook.

Set the portions before setting the table

Serve the pizza di scarola in small pieces as an antipasto. Its eight-serving yield belongs to the whole pie, not eight additional guests for the dinner. The clam pasta and the cod are the two recipes that establish the four-person scale here. Bring out the struffoli after the fish plates have been cleared, allowing people to take a little at a time.

The cod recipe already includes potatoes, so this menu does not require another cooked side. Water can stay on the table throughout. If you choose wine, choose it for the people eating and the dishes you are serving; a different bottle for every course is unnecessary. None of the recipe quantities depends on serving alcohol at the table.

Give the pie and sweets their own time

Pizza di scarola takes about five hours and three quarters from the first dough work through the final rest. Much of that is rising or cooling, but it still belongs in the morning’s schedule. Drain and cook the greens, then let the filling cool completely before enclosing it. Keep the dough’s two rises and the baked pie’s final rest in the plan rather than treating this as a last-minute oven dish.

Struffoli need a separate frying session. Their recipe includes a refrigerated dough rest, six small frying batches and a final settling period after the honey coating. Make them before starting the seafood service, so a pan of hot frying oil is not competing with the pasta. The shopping list follows this particular formula, including its crystalline fructose; use the linked recipe rather than replacing that ingredient by guesswork.

Finish the seafood in two stages

The clam recipe includes two hours of refrigerated purging within its total preparation time. Arrange that before the pasta course. Strain the cooking liquor as directed, finish the pasta in it, and bring the plates straight to the table. The recipe is designed for immediate service, not a long wait while the next course is assembled.

Buy the baccalà already desalted and ready to cook. Its fifty-minute recipe starts from that condition; it does not include soaking a dry salted fillet. Read the label and confirm the preparation with the seller before buying. Dried stockfish is a different ingredient and does not fit this timing.

For a cook working alone, allow a pause after the pasta while the cod and potatoes cook. Keep the sweet dried peppers dry, fry them as the recipe directs and scatter them over the fish only at serving. Their brittle texture is lost if they sit in the moist juices. A second cook can handle that course while the first serves the pasta; the timeline below assumes no such extra pair of hands.

Before you print

Is this dinner vegetarian?

No. It includes anchovies, clams and salt cod. The pie’s greens do not make it a vegetarian dish. Check each full recipe when planning for allergies or a guest’s dietary needs.

Does the list serve four people throughout?

It contains one complete batch of each recipe: four servings of pasta, four of cod, eight of pie and twelve of struffoli. Smaller antipasto and sweet portions can suit the meal, but the ingredient amounts remain those of the full recipes.

Can everything be ready before guests arrive?

The pie and sweets can be completed earlier in the day. The pasta needs immediate service, and this menu leaves time to cook the fish afterwards. If you want a shorter evening, choose fewer courses from the Christmas recipe collection.

Plan the dinner

When to make what

  1. Before shoppingBuy one full recipe batch each: pie 8, pasta 4, cod 4 and sweets 12 servings. The list is not guest-scaled. Buy cod already desalted; check the clam recipe and seafood collection arrangements.
  2. That morningStart the escarole pie. Allow its full 345 minutes, including two dough rises, completely cooled filling, baking and final rest.
  3. Before seafood serviceComplete the struffoli recipe, including its refrigerated dough rest, small frying batches and honey coating. Keep that frying session separate from the pasta.
  4. Before the first courseAllow the clam recipe’s two hours of refrigerated purging. Lay out the cod recipe’s pans and prepare the table; keep the seafood according to the recipe and supplier directions.
  5. Antipasto and pastaServe small pie pieces. Cook the clam pasta, strain the clam liquor as directed and serve the finished spaghetti immediately.
  6. Pause before the fishAllow the cod recipe’s 50 minutes after pasta if cooking alone. Cook potatoes and desalted cod as directed; fry the dried peppers and let them become crisp.
  7. At the tableDress the cod and potatoes with the pepper oil. Add the crisp peppers only at serving, keeping them above the moist juices.
  8. After the fishClear the savoury plates and bring out the prepared struffoli.
