Frustingo marchigiano

A dense fig-and-nut cake with cooked grape must, coffee and cocoa, in a bread-based Marchigiano family version.

  • Marche

Use sapa, a syrup made by reducing grape must. It is not ordinary red wine. This bread-based version includes a little maize flour alongside wheat flour; it is not a polenta cake.

Make ahead Make it the day before serving so the cooled mixture can settle before slicing.

Nonna's tips

  1. A moist center

This is a dense fruit mixture. Do not keep baking until a skewer comes out as dry as it would from a sponge cake.

The story behind Frustingo marchigiano

Frustingo is a Christmas sweet from the Marche, built around dried figs and nuts. Family mixtures differ. Here, stale bread softens in the fig cooking liquid before sapa, coffee, cocoa and chopped nuts turn it into a dark, moist cake. Cut small slices after it has cooled.

The Marche have several fig-and-nut Christmas mixtures. This version follows a Macerata-area family preparation with softened bread.
