Nonna's tips

  1. Keep the filling inside

Leave a border and fold in the narrow ends before rolling. This contains the filling while the twine holds the roast together.

The story behind Coniglio in porchetta

In the Marche, cooking in porchetta brings wild fennel and aromatic herbs to meats beyond pork. A boned rabbit can be rolled around a savory filling, tied and roasted. This version combines pancetta, cooked ham and the rabbit’s liver in a filling cooked before it is enclosed.
