Nonna's tips

  1. Keep the lard soft, not liquid

Spread a thin, even film before rolling the rope. The chilled spiral is easier to flatten without squeezing the layers together.

The story behind Crescia sfogliata

Crescia sfogliata is a savory flatbread associated with Urbino and the Montefeltro. A thin sheet of enriched dough is spread with lard, rolled into a rope and coiled before its final rolling. The result has fine layers beneath a freckled, golden surface.
