Golden baked spianata and cheese in meat broth

Zuppa gallurese: spianata and cheese baked in broth

Layers of Sardinian spianata, fresh peretta and grated cheese absorb rich meat broth, then bake beneath a deeply golden crust.

  • Sardinia

Ladle the hot broth slowly across the whole pan so it reaches every layer. The bread should be thoroughly moist without floating. Slice the fresh cheese thinly so it melts between the pieces of spianata.

Make ahead You can prepare the broth ahead and refrigerate it promptly in shallow containers. Reheat it before assembling the bread layers; assemble the bake when ready to cook.

Nonna's tips

  1. Moisten every layer

Pour slowly across the whole dish and watch for dry islands of bread. Add the last broth only after the first ladles have soaked in; the layers should not float.
