Nonna's tips

  1. Finish the meat first

The fregula cooks quickly compared with shoulder meat. Start its cooking only when a piece of lamb yields easily to a fork.

The story behind Fregula con carne di agnello

Fregula belongs to Sardinia’s inland cooking as comfortably as its coastal soups. In this version, small pieces of lamb simmer with onion, garlic and tomato before the toasted pasta cooks in the sauce with additions of hot broth. Pecorino gives the finished dish a savory edge.
