Nonna's tips

  1. Use the tender stems

Peel away the fibrous outside of each artichoke stem. The tender center can cook alongside the wedges; discard woody sections.

The story behind Sardinian lamb with artichokes

Lamb and artichokes make a generous Sardinian pot, with the vegetables taking on the savory cooking juices as they soften. Carrot, dried tomato and a small amount of passata give this version a rounded base; thin lemon peel lifts it at the finish. Cut the artichokes into wedges rather than fine slices, and peel the tender stems so they can go into the pot too. The final dish should be moist without swimming in liquid, with tender meat and artichokes that still hold their shape.
