Bread dressed with tomato, grated cheese and basil.

Pane matzamurru

Stale civraxiu bread is briefly dipped in salted water, drained and dressed with tomato sauce, basil and pecorino.

  • Sardinia

Test one piece before dipping the whole batch: the bread should soften without falling apart. Drain well so the tomato sauce coats the surface rather than becoming watery.

Make ahead Prepare the sauce ahead if useful, then reheat it thoroughly. Dip and dress the bread only when ready to serve.

The story behind Pane matzamurru

Pane matzamurru gives Sardinian stale bread a new texture with a quick dip and a tomato dressing. Civraxiu’s substantial crumb holds together beneath the sauce and grated cheese.
