Pane frattau layered with sausage tomato sauce, sheep’s cheese and a poached egg

Pane frattau

Thin carasau bread softened in sheep broth, layered with saffron-and-sausage tomato sauce and sheep’s cheese, then topped with a poached egg.

  • Sardinia

Have the sheep broth ready before you begin. Dip each piece of carasau for only a few seconds: it should bend without falling apart.

Make ahead Use prepared sheep broth; making it from scratch is advance preparation outside the one-hour recipe. Have the bread, grated cheese and warm serving bowls ready before dipping the carasau.

Nonna's tips

  1. A quick dip

Lower a few pieces of carasau into the broth at a time. Lift them as soon as they bend, so the large pieces remain easy to layer.

The story behind Pane frattau

Pane frattau turns brittle sheets of Sardinian carasau into a soft, layered dish. Briefly dipped in hot broth, the bread takes up tomato sauce and grated sheep’s cheese without losing every trace of its shape. This hearty version adds sausage and saffron to the sauce. Build at least three loose layers in each warm bowl and finish with an egg poached in the remaining broth. Serve immediately, before the layers settle into a single soft mass.
