Nonna's tips

  1. Keep the broth shallow

Pour the broth at the side of the pan. A shallow covered finish melts the topping without submerging the breading.

The story behind Cotoletta alla bolognese

Bologna’s cotoletta adds prosciutto and Parmigiano Reggiano to a breaded veal cutlet. A little broth and a covered finish melt the cheese while softening the crust beneath it. A small spot of tomato sauce completes this version.
