Nonna's tips

  1. Keep the rim thin

Press the seal firmly without adding a thick band of folded dough. A thin, well-sealed edge cooks with the rest of the pasta.

The story behind Casoncelli bergamaschi

Bergamo’s casoncelli hold a savory meat filling touched with pear, raisins and amaretti. The pasta is folded into half-moons and gently indented in the center, giving the filled pieces their characteristic winged shape. Butter, sage and pancetta coat the folds at the table.

Turn the sealed rim and gently indent the center, keeping the filling enclosed.
