Nonna's tips

  1. Add water sparingly

Cabbage releases liquid as it softens. Keep only enough moisture to braise the pork; the finished cassoeula should coat the spoon rather than resemble a soup.

The story behind Cassoeula

Cassoeula brings pork and Savoy cabbage together in a slow Lombard stew. The selection of pork cuts varies between local versions. Here ribs and rind cook with the leaves until the meat is tender and the cabbage settles into a thick, lightly gelatinous sauce.
