Whipped stockfish with parsley and soft white polenta.

Baccalà Mantecato

Soaked stockfish is whipped with oil into a soft, fibrous cream and served with white polenta.

  • Veneto

Use stockfish, not salt cod. Add the oil in a fine stream and keep some small flakes rather than blending the fish completely smooth.

Make ahead Buy stockfish already soaked and keep it chilled until cooking. Whip close to serving and serve with freshly cooked polenta.

Nonna's tips

  1. Stop before all the oil is used

The fish determines how much oil it holds; the measured oil is available for whipping, not an instruction to force in every drop.

The story behind Baccalà Mantecato

In Venetian cooking, baccalà mantecato is made with rehydrated stockfish. Whipping the flesh and skin with oil gives it body without milk, cream or potato.
